FOOD: Raspberry Cake

Raspberry Cake

With a freezer full of raspberries, it was high time I took to doing something wit them and with the need to find a recipe for a birthday cake for myself, what better an opportunity to use some of them up. You'd think raspberry cakes recipes would be easy to find, but apparently such cakes are a modern invention. While I love using my vintage cookbooks, none had any such recipe, for once pinterest came to the rescue. 

The recipe I came across from Food Loverr which is actually adapted from one on food.com is pretty straight forward, and like most of the recipes I come to share here, there's no out of the ordinary ingredients required. I found the bake time was very underestimated and after baking with frozen raspberries, i'd suggest using fresh ones. The icing was also meant to be decorated with raspberries, but I misjudged and didn't have enough - oops. 

Raspberry Cake


Cake
1/3 cup of butter
1 cup of sugar
1 egg
3 teaspoons of baking powder
1/2 teaspoon of salt
2 cups of sifted all purpose flour
1/2 teaspoon of cinnamon
1 cup of milk
1 teaspoon of vanilla extract
2 cups of fresh raspberries 

Glaze
1 1/2 cups powdered/confectionery sugar
1 teaspoon of melted butter 
6 tablespoons of heavy cream

Mix the butter and sugar together, adding in the egg and mix well. Combine all the dry ingredients. Separately add the vanilla extract to the milk and add, alternating with the dry ingredients into the butter/sugar mixture and mix well, until smooth. Pour batter into a lined loaf pan and sprinkle raspberries over the batter. Place into a preheated oven at 375F for 45 minutes (original recipe states 30 - but the batter was far too wet). After the cake has baked, make the glaze by mixing all the ingredients - sugar, melted butter and cream and frost while still slightly warm.

  1. This looks delicious! I'm a huge fan of all kinds of breads, but especially love one with a nice glaze/frosting. I have a bread recipe coming up on my blog soon and I had a similar issue with it being soo under-baked even though I followed the directions exactly.

    1. It's weird how some recipes can be so off with times, I know my oven can be a little temperamental at times, but yeah. Looking forward to seeing your banana recipe - I love a good banana loaf!

  6. Gorgeous! It looks like the cake turned out really moist and soft and not too dry. It would be dangerous for me to have something like this in my house!

Oh my god this looks absolutely delicious, I was just going through all the links I was sent on twitter from the chat yesterday and as soon as I opened yours and saw this photo I HAD to keep note of the recipe especially as it has 6 tablespoons of heavy cream!!   12. That looks really good! I love how the raspberries are just hanging out in the middle, I've never realized how that is done! I always imagined something way more complicated like, piping them in through a frosting tube or something. Silly me!

    1. Oh i'm sure some people would be fancy and pipe it in. By the photographs in the other recipes, they were meant to be more even across the cake, i'm not sure how or why all mine gathered in the middle!

    1. It's weird, having them in the cake seems to be recent trend, i'm not sure why they didn't do it in the past. Perhaps because the raspberries get the loaf around them wet and it would have been hard to keep them fresh. Hmm.

    My most recent baking escapade consisted of 30+ carrot cake cupcakes for my office. And I realized when I was making them that I was missing a few key ingredients (cinnamon & vegetable oil) so I really had to invent as I went ... they were 'special' hah

    1. Yeah this ended up being my birthday cake (rather than the marshmallow one I had originally planned but i'll get around to baking that one day).

      I've been meaning to make something carrot cakey for ages - always a treat! It's always fun making up recipes as you go along - that's how most of my curry recipes end up working out haha.

  17. Gorgeous cake! I Love reading old cookbooks, too. They are full of some pretty interesting recipes but I find myself looking to pinterest for food I actually want to try making and eating.

    1. For me it depends on what i'm makings - curries/main dishes it's always pinterest or just a plain old google search. But for sweet things, I always love raiding my vintage cookbooks.

  18. Mmm that looks really good! I missed out on picking some raspberries and blackberries this year... someone else took them all. I do like the look of this cake :) Could be nice with blackberries or other berry like fruit :)
